Matcha Muffins

Start the day right with these matcha muffins goodness. Bake a batch, refrigerate and grab one on the day you’re running out the door.

  • Matcha Muffins

Ingredients

  • 1 tablespoon of flax seeds + 6 tablespoons of water to make flax egg
  • 2/3 cup almond milk
  • 1 teaspoon of vanilla extract
  • 1/4 cup coconut oil
  • 1/2 cup honey
  • 1 3/4 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 tablespoon of The Matcha Warrior

Method

  1. Mix wet ingredients together  (except coconut oil and honey) and let sit for 5 minutes so mixture thickens
  2. Mix dry ingredients together
  3. Mix coconut oil and honey together
  4. Pour coconut oil and honey mixture into wet mixture
  5. Slowly fold in dry ingredients and mix thoroughly
  6. Scoop mixture into muffin pan until pan is 2/3 filled
  7. Bake for 20 minutes at 180 degrees or until muffins turn golden brown
