If we could only eat one vegetable for the rest of our life, it would probably be spinach. This leafy green is jam-packed with phytonutrients and antioxidants that are beneficial to the body. Phytonutrients and anti-oxidants are able to increase vitality, improve the quality of blood, reduce oxidative stress and restore energy. Spinach contains twice the amount of iron (essential for the renewal of red blood cells) as other greens and is also high in vitamin K, calcium and magnesium that helps in maintaining bone health. The flavonoid compounds in spinach have recently been linked to the prevention of prostate cancer.

Fresh baby spinach is a crisp and refreshing option for a salad base. Spinach can also be enjoyed steamed or sautéed for dinner. Even though we are huge proponents of consuming fresh, raw vegetables, the nutritional content of spinach actually increases when lightly cooked.
